This is a very interesting and definitely noteworthy Belgian-Dutch barley liquor that is flavored with juniper berries. It is also known by the names Hollands, genever, genièvre, or peket. It is made from barley, which is distilled to about 70% ABV and then flavored with juniper berries. Unlike cheap gins, however, this does not involve adding juniper berry flavoring at all. It requires the passage of the distilled liquor vapor through a chamber with a well-balanced mixture of juniper berries and other botanicals. This is when the extraction takes place, which allows the extraction of a much more complex aroma than if the finished extract is topped up.
